Just another WordPress.com site. This salsa almost constitutes a meal in itself. It’s a super simple recipe, but the outcome is delicious and has that wow-factor that is nice when you take it over to people’s houses! This doesn’t keep well, so don’t make it the day before you plan to serve it. 3 organic tomatoes, diced. 1 red onion, diced. 1/2 can organic corn. 1/2 can organic black beans (or 6 oz if you soak them yourself). 6 oz smoked gouda cheese, diced. 4 sprigs of fresh cilantro, finely chopped.
