http://cookingintheheartland.blogspot.com/2008/09/basil-pesto.html
Cooking and Growing in the Heartland. Tuesday, September 23, 2008. I cannot take all the credit for tonight's dinner, considering that my mom was the person who actually made the pesto sauce. She makes a rockin' pesto every year with the tons of basil she manages to produce. She freezes a majority of the pesto in ice cube trays then gives me cute little frozen pesto cubes in plastic bags- super easy and convenient for quick meals. God, she's amazing! 2 cups fresh basil. Cooking and Growing in the Heartland: April 2009
http://cookingintheheartland.blogspot.com/2009_04_01_archive.html
Cooking and Growing in the Heartland. Sunday, April 5, 2009. A family favorite of ours is Greek spanakopitas (spinach pies, if you prefer an easier way of pronouncing). Spanakopitas are time consuming to make but are totally worth the time because they are so gosh darn good; crispy phyllo outside, spinach, dill, onion, and melted feta in the inside. HEAVEN, I tell ya. Get the recipe here. I added some fresh dill instead, worked just fine. :-). The mouthwatering inside of the spanakopitas). 3 scallions, t...

Cooking and Growing in the Heartland: Yesterday's Lunch
http://cookingintheheartland.blogspot.com/2011/03/yesterdays-lunch.html
Cooking and Growing in the Heartland. Thursday, March 10, 2011. I thought I would practice for the detox by making a lunch that didn't contain any of the banned foods. I ended up with this: a bed of mixed greens topped with sliced avocado, tomatoes, pinto beans, cilantro, onions, and dressed with lime juice and Mrs. Dash's Extra Spicy. Seasoning (sodium free). It was so good and provided me with plenty of energy for my afternoon workout. Look for posts on our 7 day detox starting next week!
