Steamed Chicken with Black Mushroom. 1 kilo chicken, cut into bite-size pieces. 2 tablespoons cooking rice wine. 1 tablespoon light soy sauce. 1 tablespoon sesame or canola oil. 9 pieces dried black mushrooms, soaked in hot water till soft (reserve 2 tbsp soaking water). 4 stalks spring onions. 1 Marinate chicken pieces by combining the first seven ingredients for an hour.
