Tuesday, October 18, 2011. Ham and cheese quesadilla with a reduced balsamic glaze. 1 pound thick cut sliced hat. 1 pound gruyere cheese (shredded). 10" whole wheat flour tortillas. Balsamic glaze (recipe below). 1 1/2 cup balsamic vinegar. Pour the balsamic vinegar into a pot. bring to a boil, then reduce to a low simmer. cover and simmer for about 1 1/2 hours, or until reduced to about 1/4 cup. set aside. Remove the quesadilla from the pan, cut into slices, and drizzle the balsamic glaze over.
