WHAT'S COOKING AT THE EDWARDS'. Saturday, August 1, 2015. We have a community garden plot and as luck would have it, we have okra running out of the kazoo. We like okra, but it is only July, and we don't know what to do with it all. I did what any Southern girl worth anything would do. I googled pickled okra, and CLICK, Here. 2 pounds young, small to medium okra pods. 4 small dried chiles, split in 1/2. 2 teaspoons mustard seeds. 12 sprigs fresh dill. 4 cloves garlic, whole. 1 teaspoon whole peppercorns.

Around here, we encourage fall to camp out for awhile, as we know that soon winter will be knocking on the door. In this perfect fall weather, Chelsea's class took a field trip to Challengeland, a ropes course place up in the hills of Budapest. Bill "Sling' Slingerland won first place and $1,000 in grocery coupons from H.E.B. at the Aransas Pass Shrimporee Seafood Cook-off several years ago. Ingredients: Makes about 20 enchiladas. 1 1/2 pounds cooked shrimp, chopped. 1 poblano pepper, chopped. 1 onion, chopped. 1 can Cream of Shrimp soup. 2 cups Monterrey Jack cheese, divided. 3 cans salsa verde. Additional grated Monterrey Jack cheese. This makes about 5 enchiladas. 1 1/2 cup orange juice.
