The Saltaire brew went into its bag-in-box, very easy indeed – just moving 20 litres from FV to bag is simple and quick. If I could drink 20 litres before it went flat I’d do that more. I wanted to brew something big in both strength and taste. Last year I brewed a 10% beer that was actually pretty good even though I was using up some hops I’d had left in the freezer. This time round I used a similar malt bill but planned the hops more around what I thought would work than what I had to use up. Next post →.

This was the pumpclip for the Saltaire bar beer – with a lovingly drawn illustration by my very talented wife. I wanted to do something a bit different, but at least halfway to being something you might see in a real bar/pub. I’m not generally arsed with low ABV beers, there’s so many shite sub 5% beers around, and I’ve had very little luck the 6 times I’ve tried to go below 5%. So I generally set the lower limit at 5%. My original fermentation schedule for this beer was for it to take 2 weeks in primary to reach around 1007 but as is normally the case things haven’t gone to plan. Every few days I go through my older photos to see if anything stands out to me as something that I could edit and find the beauty in that maybe I didn't see before.
