Deo Volente chickens are raised longer than the average grocery store chicken, which results in more flavor and better value, with a higher meat to bone ratio. Since they are an older chicken, they should be cooked until the breast meat reaches 200 degrees. This allows the meat to become tender, but still be moist and delicious. Update from Fall 2012. After last year when our birds were stolen right before processing, we decided it was time to take a break from raising large batches of Cornish cross chickens. It was a difficult decision as we love providing quality chicken to our customers but we needed to figure out a way to do it without getting birds stolen. And we've sold out!
