Here's another easy one, courtesy of Rich Roll, Julie Piatt, and The Plant Powered Way (with just a few modifications). So far I'm loving the recipes I've made from this book: they're relatively easy, based on whole ingredients, and really tasty. 1 1/2 cups raw walnuts. 1 cup pitted Kalamata olives. 2 celery stalks, coarsely chopped.

Made these with my niece last night and liked them much more than I thought I might. Great flavor, great texture, super easy. I made them a second time without. 100 g (3/4 cup) avocado flesh (very ripe, but not brown). 189; cup sugar. 189; cup cocoa powder. 50 g dark chocolate chunks (I used 85% cocoa). 189; tsp. baking soda. Preheat oven to 175°C / 350° F.

I've been pretty obsessed with overnight oats the past couple of months. To me they're so incredibly soothing. As a bonus, they cut some time out of my morning rush and are portable and easy.
