I HJRTAT AV MESSINIA. Bland de grna kullarna i Messinia, i Kalamatas olivoljeregion ligger den lilla byn Vasilada. Det r ett klassiskt exempel p en liten grekisk by med vackra vita hus, en kyrka och en gammal olivkvarn. Det r inte en tillfllighet att kyrkan och olivkvarnen var de enda institutionerna i byn. Olivoljeproduktionen var alltid den viktigaste skrden i denna del av vrlden. Detta blir tydligt nr man tittar ut ver landskapet och ser det silvergrna havet av olivtrd och ar av sm vita byar.

AN EXTRA VIRGIN OLIVE OIL. Our olive oil comes from the olive groves located among the hills near the village of Vasilada in the Kalamata olive oil district. The olives are handpicked with simple tools such as, saws, wooden sticks and nets. We harvest just before the olives mature and they are taken to the mill within hours after harvesting to prevent oxidation and ensure the highest quality. Pictures, click to enlarge:.

Even among the worlds highest quality olive breeds, there are differences. Our olives are harvested just before the olive has time to mature completely. This produces a powerful extra virgin olive oil with a very long shelf life. The aromas of the Koroneiki are all there- artichoke, fruitiness, newly cut grass, but the peppery sensation makes this oil something else, perfect to everything from salads, fish to barbecued red meat.
