Monday, June 29, 2009. I am a grab and toss ‘n mix cook so you may not see exact measurements in every recipe. Wash and cut seven good-sized russet potatoes and put in larger mixing bowl. Juice from one lime. 1/4 small onion, minced. 15 tsp. minced garlic. 1/2 tsp. dried cilantro. 1 tsp mustard (approx). 1 tsp brown sugar. Mix marinade in small bowl then coat potatoes well. I found this recipe online. 1 large onion, chopped. 1 large pepper, chopped. 1 garlic clove, crushed. 1 1/2 tsp Colman's Mustard (not gluten free so I used regular mustard). 1 1/2 tsp chili powder. 1/2 tsp turmeric, dried. 1 c tomato sauce. 1 1/2 TB molasses. 1/2 tsp apple cider vinegar. 1 dash Tabasco sauce. 4 c beans, cooked. Juice of one lime. Dash of sea salt. This "relish" is great for topping a baked potato, salad, or even rice. You can control how hot it is by the amount of jalapeno peppers used.
