52 pancakes in 52 weeks: Week 47 - Fluffy Apple Pancake
http://coconutinmykitchen.blogspot.com/2013/09/week-47-fluffy-apple-pancakes.html
52 pancakes in 52 weeks. Saturday, September 21, 2013. Week 47 - Fluffy Apple Pancake. It's that time of year again, when we go apple picking and have an abundance of apples. This will be one of many apple recipes I will be making this week. I found the recipe through Pinterest, one of my new addictions, and is from Love and Lemons. This recipe resembles the Dutch Baby Pancakes I made earlier in the year, but this doesn't puff up as much, but still delicious. Jó étvágyat! 1/4 cup brown sugar. J'aime, j'a...

52 pancakes in 52 weeks: Week 46 - Honey Glazed Buttermilk Ebelskivers
http://coconutinmykitchen.blogspot.com/2013/09/week-46-honey-glazed-buttermilk.html
52 pancakes in 52 weeks. Saturday, September 21, 2013. Week 46 - Honey Glazed Buttermilk Ebelskivers. This week's recipe didn't exactly go as planned. Simple enough recipe, or so I thought. It came from my Ebelskiver Cook Book. It's a simple pancake batter with a honey glaze. You start by melting butter in the wells of an Ebelskiver pan, then add a bit of honey to each well, then batter. Note to self, burnt honey does NOT taste good! Honey Glazed Buttermilk Ebelskivers. 1 cup all-purpose flour. 7 Cook un...

52 pancakes in 52 weeks: March 2013

52 pancakes in 52 weeks. Saturday, March 30, 2013. Week 27 - Peeps on a Pond Pancakes. With tomorrow being Easter, the idea of Peeps pancakes came to mind. A quick Google search for recipes didn't result in much, but I did find this cute idea. I normally don't like color themed pancakes (reason why I didn't make green pancakes for St. Patrick's Day), but this was too cute to pass up. Hello Peeps, you seem like a healthy breakfast food :-). Peeps on a Pond Pancakes. 1 egg, separated. 5 Pour the liquid ing...

I could honestly do without all the stress of holiday shopping and finding the "perfect gift". To me, a well prepared meal made with love is all you need. To get in the Christmas spirit, I made Egg Nog Pancakes this weekend. Full Egg Nog on left, half and half on right. 2 eggs, separated. 2 cups Egg Nog. 4 Lig...

52 pancakes in 52 weeks: February 2013
http://coconutinmykitchen.blogspot.com/2013_02_01_archive.html
52 pancakes in 52 weeks. Monday, February 25, 2013. Week 21 - Blueberry Pancakes. This weekend, I wanted simple.again. I feel like I often look for the simple recipe, but hey, when you have an 8 month old baby, simple is sometimes the best you can do. And simple doesn't have to necessarily mean bad. Simple is good. So I had a handful of blueberries in the fridge and tossed them in to my simple pancake mix and voila! Yummy pancakes for breakfast. Jó étvágyat! 2 eggs, separated. 4 tablespoons melted butter.

52 pancakes in 52 weeks: Week 50 - Korean Scallion Pancakes with Spicy Dipping Sauce
http://coconutinmykitchen.blogspot.com/2013/11/week-50-korean-scallion-pancakes-with.html
52 pancakes in 52 weeks. Thursday, November 28, 2013. Week 50 - Korean Scallion Pancakes with Spicy Dipping Sauce. Here's another tasty savory pancake. I made these to go along with a stir fry dinner and served with a spicy soy dipping sauce. Rather than using the griddle, I used my skillet to make large pancakes. We just tore in to these and dipped in the sauce. Jó étvágyat! 2 eggs, beaten. 1 1/2 cups water. 1 bunch scallions, thinly sliced. Oil for cooking in the pan. 1/3 cup soy sauce.

52 pancakes in 52 weeks. Saturday, June 29, 2013. Week 37 - Birthday Cake Pancakes. Turned 1 recently. Amazing how quickly this past year went. To think a year ago she was this tiny ball of cuteness who couldn't do much of anything, and now she's a walking, talking little girl with quite the personality on her. 1 1/2 cups all-purpose flour. 1 cup cake mix (I had white cake mix, but you can use yellow cake mix too). 1 tsp baking powder. 1/2 tsp baking soda. 2 Tbsp butter, melted. 1 tsp vanilla extract.

http://coconutinmykitchen.blogspot.com/2013_11_01_archive.html
52 pancakes in 52 weeks. Thursday, November 28, 2013. Week 51 - Blueberry Sour Cream Pancakes. I'm starting to come to the end of this fun, sometimes stressful, but (almost) always tasty journey. There were a few major fails along the way which I chose not to post. So I guess I have made more than 52 recipes already, but the 51, soon to be 52 recipes are ones I can be proud of and comfortably serve to guests. This was another Pinterest find from Remodelaholic. Blueberry Sour Cream Pancakes. 3 Ladle batte...
