Thursday, January 31, 2008. Broccoli and Cheese Casserole. C-Fresh's mom sent me this recipe from his childhood for a broccoli and cheese casserole. Quick, easy, cheap and yummy! Instant Rice = 2 cups dry. Frozen broccoli = 2 boxes or more if you want- thawed. Stick of butter -melted. 1 can -cream of mushroom. 1can -cream of celery. Milk -use one of the cans full. Wednesday, December 19, 2007. I love asparagus and Amanda made the most amazing asparagus last Thursday. It was perfectly done so of course I had to steal the recipe! 1/4 cup virgin olive oil. 1/2 cup Kalmata olives roughly chopped. 1 Tbs lemon pepper (or more or less to taste). Pinch of Kosher salt. Wednesday, November 28, 2007. I just finished reading an Advanced reader's copy of The Amateur Gourmet: How to Shop, Chop, and Table Hop Like a Pro (Almost). And I enjoyed it. It was by no means the best written book about food ever but I have read much worse. The author visits such topics as knives and knife skills, eating out, shopping, and cooking for family. Every chapter includes recipes that relate to one of the recipes he talked about in that chapter. The author runs the Amateur Gourmet. On Thanks...

Spinach Calzones With Blue Cheese. 1 Tsp olive oil (to grease the pan). 4 garlic cloves, minced. 4 cups spinach leaves. 1/2 small sweet onion finely chopped. 1 1/3 cups sliced portobella and button mushrooms. 3/4 cup (3 ounces) crumbled blue cheese. 4 red basil leaves. Preheat oven to 425°. Unroll dough onto a baking sheet coated with olive oil. Cut into 4 quarters. Pat each quarter into a 6 x 5-inch rectangle. Sprinkle garlic evenly over rectangles. Nothing except for the stir fry sauce cost more than two dollars and the sauce was only two and some change. 3 Cups rice (I love long grain brown). 1 bag frozen stir fry veggies. 10 oz firm tofu cut into cubes. 2 Tsp olive oil.
