I love this dish because it remins me of my lovely holiday in Tascany a few years ago. 11 tablespoo greated Parmesan cheese. 1 tsp chopped fresh oregano. 189; tsp ground. 1/2 cup chopped red pepper. 1 tablespoon chopped chives. Add the egg and mix thoroughly. Roll the mixture into small balls. Finely chop the chilli. Heat.

Cooking time : 45 minutes. 4 pieces chicken joints (skin removed). 10 fresh tomatoes (chopped). 2 tablespoon tomato puree. 1 handful chopped herbs (basil, thyme, oregano and parsley). 2 clove garlic (chopped). 1 teaspoon brown sugar. 1 cup white wine. 1 small courgette (diced). 3 tablespoon olive oil. 189; cup parmesan cheese (grated). Sprinkle the chicken joints with salt and pepper. Dredge with flour.
