The sauce cooks while the pasta is in the pot so it is super quick to put together. As a shortcut, I bought a bag of shredded Brussels sprouts from Trader Joe’s. If you wanted to add some additional flavor you might saute some pancetta before adding the Brussels sprouts to the pan. Of course, it would not be a recipe for Meatless Monday then.
