Sweet Potato and Leek Soup. 1 tablespoon liquid coconut cooking oil. 1 tablespoon powder vegetable broth with herbs. 4-5 cups of water (enough to cover the sweet potatoes). 1 tablespoon nutritional yeast (optional). The second meal I cooked is based loosely on a salad I ordered during my first trip to San Francisco. Also great. Kale, Quinoa, and Salmon Salad. 1 head of kale (curly variety).
