Julia’s sicilian-style turkey stuffing. 2 tablespoons extra-virgin olive oil. 1-2 medium yellow onions, finely chopped. 5-6 garlic cloves, peeled and minced. Lots of celery (8-10 stalks), finely chopped. Pound mushrooms, coarsely chopped. 1 pound lean ground beef. 1 pound (4-5 links) Italian sweet sausage, casings removed. Turkey giblets (gizzards, liver, and heart), diced. 4-6 slices pepperoni, diced. 1 cups basmati rice, cooked al dente. 2 handfuls pine nuts. Small handful dried oregano, hand-crushed.

Extra virgin olive oil. Kosher salt and freshly ground black pepper. Your favorite pasta sauce. Parmesan cheese for serving. Using a sharp paring knife, carefully pierce the spaghetti squash in a few places (about 6 slashes, 2 to 3 long). Microwave on high for 10 to 12 minutes, turning and rotating the squash halfway through. The squash is cooked properly when a fork can easily pierce through the skin into the squash, if there is resistance, microwave for an additional 1 to 2 minutes.
