West Mersea Oyster Bar first opened its doors in 2006 with Michael Dawson as an expansion to his oyster business. It soon became huge success. On April 1st 2010, Chris Avila (Head Chef) and Sel Yuzen (Manager) took over the ownership of the Oyster Bar with an improved menu and modernised interior. If you like a good hearty meal then this venison suet pudding is for you! A tasty alternative to Sunday roast on a chilly afternoon. Fresh chopped herbs (I used lovage and rosemary). 1 tablespoon of plain flour. 1 can of Guinness (or any beer). 200g of self raising flour. Water to bind together. Along with the plain flour.
