A little bit of everything and a lot of nothing in particular. A perfect recipe for a rainy day…. Chicken Pie With Chunky Potato Topping. 600ml chicken stock (I used 2 Kallo organic chicken stock cubes dissolved in hot water). 1 x 17kg whole chicken. 5 sprigs of thyme. 2 carrots, peeled and thinly sliced. 2 leeks, halved and sliced. 2 celery sticks, sliced. 1kg potatoes, peeled and cut into 1cm cubes. 75g mature cheddar, grated.
