My first experiment with culinary uses of the hop plant was eating hop shoots in the spring, which I have also foraged from wild hedgerow hop plants. I wrote about these elsewhere. And found them to be pretty tasty. Hop plants benefit from pruning in spring, so it is possible to glean some hop shoots from cultivated plants without damaging their growth. Bitter. So bitter as to be really quite unpleasant.

They are smaller than domesticated plums, with a dark purple skin, often covered in a whitish bloom. They have a tart taste raw, but once cooked with a little sugar, have a delicious fruity flavour. Damsons can be found growing wild in hedgerows, but are also cultivated and can be found lurking in gardens and elderly orchards. Room for a Radish.

This variety produces the relatively thin leaves with serrated edges. It is reasonably hardy, and will over-winter in mild areas or with a little protection. Sow in August for a winter crop. As a bit of background, I grow my tomatoes outdoors in SE England in pots against a south-facing wall where they get lots of sun. Some varieties might prefer a greenhouse, or somewhere nearer the Med, but my list should give a bit of an idea about what will grow well here in the UK. Paired it with some seasonal veg from the garden and gave it a modern twist. 05 litre white/chicken stock. 1 small bunch parsley stalks. A couple of thyme sprigs. 1 egg and two egg yolks. 1 tbsp dijon mustard. 1 tsp mustard powder. 1/2 tsp smoked paprika. 1 small tin anchovies. 1 tbsp capers, drained. 2 tbsp extra virgin olive oil. Pre-heat the oven to 120C.
