Room for a Radish. Seasonal suppers and stories from the veg patch. Wild hop plants can often be found growing in the hedgerows and field margins of Kent and Sussex. These plants are a legacy from the time when hops were a common crop in South East England. Sadly most hops used in the UK beer industry these days are imported, often from as far afield as China, though the craft beer movement is spawning a renewed interest in English hops. My first experiment with culinary uses of the hop plant was eating hop shoots in the spring, which I have also foraged from wild hedgerow hop plants. I wrote about these elsewhere. And found them to be pretty tasty. Hop plants benefit from pruning in spring, so it is possible to glean some hop shoots from cultivated plants without damaging their growth. Bitter. So bitter as to be really quite unpleasant.

Room for a Radish. Seasonal suppers and stories from the veg patch. Damsons - and what to do with them. Damsons are a variety of wild plum in season in September. They are smaller than domesticated plums, with a dark purple skin, often covered in a whitish bloom. They have a tart taste raw, but once cooked with a little sugar, have a delicious fruity flavour. Damsons can be found growing wild in hedgerows, but are also cultivated and can be found lurking in gardens and elderly orchards. Room for a Radish.

Room for a Radish. Seasonal suppers and stories from the veg patch. Rocket seeds are sold in a number of varieties, a popular one of which is called wild rocket. This variety produces the relatively thin leaves with serrated edges. It is reasonably hardy, and will over-winter in mild areas or with a little protection. Sow in August for a winter crop. If you do have some in your garden, I suggest eating your fill in spring then digging out the plant's roots before it spreads too far. As a bit of background, I grow my tomatoes outdoors in SE England in pots against a south-facing wall where they get lots of sun. Some varieties might prefer a greenhouse, or somewhere nearer the Med, but my list should give a bit of an idea about what will grow well here in the UK. Paired it with some seasonal veg from the garden and gave it a modern twist. 05 litre white/chicken stock. 1 small bunch parsley stalks. A couple of thyme sprigs. 1 egg and two egg yolks. 1 tbsp dijon mustard. 1 tsp mustard powder. 1/2 tsp smoked paprika. 1 small tin anchovies. 1 tbsp capers, drained. 2 tbsp extra virgin olive oil. Pre-heat the oven to 120C.
