Salmon with a Roasted Vegetable Salsa. 1 fillet o salmon (preferably with skin still on). 1 red onion sliced into 1/4" slices. 4 large roma tomatoes halved. 1 season both side of the salmon with pepper, salt, and olive oil. set aside for grilling. 4 roughly chop roast tomatoes and onions. seed and finely dice jalepeno. combine in a bowl. season with 1/4 tsp of salt and pepper. squeeze lime and mix the mixture well. We were fortunate enough to line up several factors to make the trip awesome: (1) Super cheap plane tickets, (2) Friend returning from service work in South Africa at same date, (3) Wonderful place to stay with great friends, (4) picking up stuff from storage in Denver to make the whole trip "practical". Friday, October 23, 2009. Blog Bites: 1st Successful Attempt at Gnocchi also the comeback of Ga Xao Xa Ot. This week was highlighted by 2 great dishes. Dan made an old fashioned favorite of Ga Xao Xa Ot or Lemongrass Chicken with Chilies for Wednesday night's dinner. We ate this with a side of Ginger Garlic Green beans and some jasmine rice. Monday, September 28, 2009. Happy couple known as Bill and Alba 2. Celebrity nickname for Bill and Alba. For an early afternoon refresher. The hummus was the best we ever had and the artichoke crab dip was equally superb. We then proceeded to Elliot's Oyster House. A Moroccan themed restaurant bar with some tasty snacks. Good conversations were had and memories were shared. Before calling it a night we revisited the Dinette. A late night taco stand with Northwest flavor. Brian with a close Runner-Up.
