Tortellini in the Crock Pot. 1 (19oz) bag of frozen cheese tortellini. 1 small bag of fresh spinach (I used about half of a 5 oz package, but more is better! 2 (145 oz) cans of Italian style diced tomatoes, drained. 1 block (8 oz) of cream cheese* (softened in microwave). 1 lb of ground sausage or chicken/turkey sausage. 3-4 cups of chicken broth (start with 3, add 1 more if it looks like it needs it). 2 Cook on low for 4-6 hrs. A Year of Slow Cooking.

Saturday, February 1, 2014. 2 lbs ground beef or turkey. 1 can refried beans. 15 ounce tomato sauce. 1 pkg taco seasoning (we use homemade). 1 – 2 cups shredded cheese. 15ish hard taco shells. Your favorite taco toppings. 1 Brown ground beef. Drain off any fat. 2 Add refried beans, tomato sauce, and seasoning. 3 Spoon mixture into taco shells. 4 Place filled shells into a 9×13 pan, standing up. Sprinkle with cheese. 5 Bake at 400 for 10-12 minutes or until heated through.

Oatmeal Pumpkin Breakfast Smoothie. 1/4 cup pumpkin, canned (not pie filling). 1/4 cup rolled oats (I used Gluten Free). 1/2 tsp. pumpkin spice seasoning. 1 tsp maple syrup. 1/4 tsp. stevia. 1/2 cup greek yogurt vanilla. 3/4 cup coconut milk, unsweetened from carton or non-fat milk. 1 Place all ingredients in a blender and process until smooth. Note: For extra creamy smoothie, make it the night before and place in the blender the next day!

Tuesday, September 30, 2014. We had this crazy hail storm. Lots of damage in our county. We were lucky and didn't get much of the hail. We didn't have any damage besides a dead zucchini plant. The kids loved playing with the ice though. Friday, September 26, 2014. Gwen had the day off from school so I took the day off and we went hiking. We went to Roxborough National Park and hiked about 1.5 miles. Gwen was quite obsessed with the poison ivy that was everywhere. We had so much fun!

Friday, January 2, 2015. We took the kiddos to the Wildlife Experience in Parker because they were having a, what Leo calls, a Lego "Zibit". The exhibit was great. The kids could play with tons of Legos and make vehicles to race. They had really large Legos as well where you could make castles. The kids loved it. Saturday, June 6, 2015. Leaving on a Jet-plane. Gwen is not even 7 years old and she took her first solo flight. She flew to Tulsa to visit her grandparents. She was armed with Pringles, Sour Patch Kids, the iPad, and new Shopkins. What more could she ask for? She did amazing. On the way to the airport she said being nervous was giving her a stomach ache.
