Whisky Science: Fermentation flavours

http://whiskyscience.blogspot.com/2011/11/fermentation-flavours.html

Bits of information about Scotch single malt whisky, its production, history and chemistry. Wednesday, November 23, 2011. Fermenting in Loch Lomond distillery. Whisky wort fermentation produces ethanol, but also a variety of important flavours. Yeasts use simple sugars for their growth and energy metabolism. Simplified; when the yeast has oxygen, it produces water and CO ₂. From glucose, but in anaerobic conditions it turns glucose into ethanol and CO ₂. Pear, strawberry, jasmine. Lemon, rum, strawberry.

But nobody told the AD. Burns play a significant role in the manufacturing process. The most important attributes of steeping and mashing water are its hardness, pH, overall mineral content and microbiological purity. Depending on the source. The pH ( pondus hydrogenii. Whisky Science: Copper

http://whiskyscience.blogspot.com/2014/10/copper.html

Bits of information about Scotch single malt whisky, its production, history and chemistry. Saturday, October 18, 2014. Scotch malt whisky is distilled in copper pot stills. Copper is used for its malleability and heat conductivity, but mainly because it is believed to render the spirit less sulphury. And more refined. Surprisingly little is known about the mechanisms and chemistry behind the positive effects of copper to the spirit. Indian still from 18th century. There is some evidence of increased est...

Just Peat It!: Kesämatkailua Teerenpelille

http://justpeatit.blogspot.com/2015/07/kesamatkailua-teerenpelille.html

Lastuja viskistä ja muista Dionysoksen herkuista. Keskiviikko 15. heinäkuuta 2015. Tie vei Lahteen sukuloimaan. On vienyt jo useana kesänä. Kertaakaan en ole kuitenkaan saanut aikaiseksi käydä Teerenpeliä pällistelemässä. Nyt koetin asian korjata. Takaovesta sisään astuessa eteen aukeaa mäskäysastia, washbackit ja tarvittavat tekniset vempaimet viskin valmistamiseen. Joki kiinnittää huomiomme seinällä komeilevaan sertifikaattiin - oppia on haettu aina Kilchomanilta asti. Samalla käydään läpi visk...Joki ...

Lastuja viskistä ja muista Dionysoksen herkuista. Keskiviikko 26. marraskuuta 2014. Pot Still viskejä med Aisling Byrne.

Just Peat It!: syyskuuta 2014

http://justpeatit.blogspot.com/2014_09_01_archive.html

Lastuja viskistä ja muista Dionysoksen herkuista. Tiistai 23. syyskuuta 2014. Never heard of a hobbit before - testissä kasa nevöhööd-viskejä. Tarussa sormusten herrasta entti nimeltä Puuparta ihmettelee pieniä olentoja, jotka ovat eksyneet hänen metsäänsä. Elokuvassa Puuparta päästää suustaan lausahduksen: "Never heard of a hobbit before". Viime perjantaina pääsin kokemaan Puuparta-tasoista ihmetystä kun suuntasin kotitastingiin, jonka mystisenä teemana olivat nevöhööd-viskit. Inchmurrin 1966/1996 OB 40%.

Where Master Quill meets Whisky and other good stuff. Top 25 Single Malts. October 10, 2016. Tomatin 12yo (43%, OB, Bourbon and Sherry Casks, 2016). Not so long ago, I reviewed four twelve-year olds from Tomatin’s Cuatro Series. Whisky that started out in Bourbon casks but then were transferred for a finish into four different kinds of Sherry; Fino. A longer while back, I also reviewed the entry-level 12yo. Thanks for the Whisky Erik! Posted in 83 Points. Whisky from Master Quills Travels. No, not really.

Whiskey Obsessive: June 2013

http://whiskeyobsessive.blogspot.com/2013_06_01_archive.html

Sunday, June 23, 2013. Vintage 21 and Rittenhouse 21 Rye Whiskey Reviews. Old enough to drink themselves. Along with Islay Scotch, aged rye is my abiding whisky love. So it is with much happiness that I was able to change out of my baby-vomit-covered shirt, sit down, and write this review. As you may remember from my first posts. Vintage 21 Rye Whiskey (Kentucky Bourbon Distillers) 47%ABV ($120 if you can find it). Attic, church pews, incense, dark rye toast, toffee, raisins. These are both excellent rye...

Whiskey Obsessive: May 2013

http://whiskeyobsessive.blogspot.com/2013_05_01_archive.html

Thursday, May 9, 2013. The Obligatory Robert Parker Post. Posted that Robert Parker. Decided to tackle bourbon, my reaction was a Tourette's attack that I don't feel comfortable repeating here. Most of the writing in the bourbon world has been negative, as exemplified in the thoughtful article by Tim Read at Scotch and Ice Cream. My reaction was somewhat different. I don't actually think Bob is evil. There, I said it. Over the years, he has become an unlikely arbiter of wine taste in the world. He ha...
