Monday, February 1, 2010. Yields: 12-16 crepes depending on size. Mix Flour, Sugar and Salt together. In another bowl mix eggs, oil, milk and vanilla together. Mix dry and wet ingredients together until almost combine, its ok to have some lumps. Heat skillet over medium heat with some cooking spray. In a medium bowl, cream together the sugars and shortening using an electric mixer. Slowly add vanilla and egg while mixing. In another bowl combine flour, baking soda, baking powder and salt. So, almost a month ago, my appendix was removed in the middle of the night. Turns out, there were at least four appendectomies performed in the emergency room in a twelve-hour span including one on a friend. How crazy is that?
