Şarap yapmak için önce üzümler bağlarından toplanır, ardından ezilir sonra, maya (üzümde doğal olarak bulunur) üzüm suyundaki şeker ile birleşir ve aşamalı olarak bu şekeri tüketerek alkole dönüşür. Maya aynı zamanda havada buharlaşan karbondioksiti üretir. Mayanın işlemi tamamlandığında üzüm suyu şaraba dönüşür. Üzüm şarabı kırmızı, beyaz veya rose (pembe) olur.
