人口1万人あたりの飲食店数について、見てみると、145.9店舗あって、13大都市のうちで 堂々 の第1位です。 平成8年から11年までの3年間に 存続し続けた店舗数 が、32,724店舗。 その間に 開店した店舗数 が6,591店舗。 その間に 閉店した店舗数 が10,467店舗。 飲食店の平均売上高 全国 の推移をみると、平成8年が34,256,000円だったのが、平成11年で34,024,000円、平成13年にはさらに減少して32,537,000円と減少傾向に歯止めがかかりません。 居酒屋 バー 業態と レストラン 業態では、独自性を重視したメニューつくりを行っているお店が多く、その反面 喫茶 カフェ 業態や 麺類 業態ではさほど独自性のあるメニューを意識していないというという結果が出ました。 一方、 喫茶 カフェ では、斬新で工夫を凝らした店舗作りを意識し、 居酒屋 バー レストラン では、意識されていません。 レストラン では平均客単価の高さもあいまって、お客様は、一過性の立ち寄り利用ではなく、 お店選び 立地の確認 を慎重に行ったうえで来店していると考えられます。

とりわけこの醸造所が位置する マルターディンゲン村 は、古来赤ワインの生産で名を馳せ、 赤ワインといえばマルターディンガー という言葉が残る、歴史的にみても赤ワインの銘醸の地でもありました。 収穫したぶどうをワイン生産組合に売り渡すのではなく、自らの手でワインを 生産 、 瓶詰め 、 販売 という道を選びました。 古 いにしえ の赤ワイン、 マルターディンガー の復活の狼煙を上げたのです。 ついに彼は、 1995年シュペートブルグンダー レゼルヴェ で、大成功を収めます。 権威あるドイツワイン誌、ゴー ミヨの ドイッチャー ヴァインガイド で赤ワインの部でトップの座を手に入れたのです。 また、世界ピノ ノワール コンテストでも、好成績を収め、かのロマネ コンティより上位に入賞したことは、ベルンハルトの自信につながりました。 2001年シュペートブルグンダー レゼルヴェ 赤 750ml 11,550円. 2000年シュペートブルグンダー アルテレーベン 赤 750ml 7,875円. 2001年マルターディンガー ビーネンベルク シュペートブルグンダー 赤 750ml 5,250円.
