Going vegan – January 2015 challenge. The 4th day of crazy vegan challenge. →. Vegan challenge – day 3. January 3, 2015. So, here I am on day 3 of my January vegan challenge. On day 1 I felt excited as I had been anticipating the day for some time. I had lunch with friends and ate a beautiful vegetarian risotto. Dinner was a veg stir fry. Day 1 went by as a breeze.
