A recipe from Adventures in the 32-akre Wood. Many thanks Janet which she copied from the can of Bush's Blackeye Peas. Hoppin' John Over Rice (6-7 servings). 1 cup chopped onion. 1 sweet red pepper, chopped. 1 green pepper, chopped. 1 cup cooked ham. 2 tbsp. vegetable oil. 2 15 oz. cans blackeyed peas. 1/2 to 1 tsp. hot pepper sauce. 3 cups cooked white rice. Optional: salsa, sour cream. 1 cup = 8 0z (I think according to here. Use plain yogurt instead of sour cream. 1 medium freerange egg, lightly beaten.

Comes from a great Cook, Elaine and I am sure that if you tried the original you wouldn't necessarily want to change it but as ever I tinker with things (sorry please excuse the pun). Thanks to Elaine for publishing the original recipe for me to find and enjoy. 1lb chuck steak cut into 1” cubes. 1 oz seasoned flour. 4 oz bacon trimmings, chopped. 2 carrots, sliced. 1/2 pint light ale. 4 oz sliced mushrooms.

This is a light fruitcake, which goes down well for afternoon tea (if you have such a thing) or a coffee morning. the base flavour is vanilla but this can be left out if you don't like it. 125g Butter (or margarine). 1/2 tsp baking powder. 1 tsp Vanilla Bean paste (trust me this doesn't work as well with cheaper essences). I found yesterday, when clearing the vegetable drawer in the refrigerator, that I had an excess of onions (also potatoes, but that is for another post), so I decided to make French Onion Soup. Long grain rice measured up to the 8 fl oz mark in a measuring jug. 16 fl ozs boiling liquid (see method). 1 ½ lb smoked fish fillets (haddock, cod or mackerel). 1 tsp Madras curry powder. 3 hard-boiled eggs chopped. 3 heaped Tbsps chopped fresh parsley. 1 Tbsp lemon juice. Place the fish in a saucepan and cover with 1 pint cold water. Bring to the boil, put on a lid and simmer gently for about 8 minutes. Then drain off the water into a measuring jug. Monday, 1 December 2008. Yesterday I took a pack of organic stewing beef which I had removed from the freezer the day before. So I made it into a casserole using what I had in the fridge. First I cut each piece in two to make 1 inch cubes, then I put them into an empty freezer bag into which I had placed 2 Tbsps flour, tied the bag closed and tossed them around until all the pieces were thoroughly coated with flour. At this point I stirred in some defrosted mushrooms. D's version was a disaster!

Saturday, 28 February 2009. Okay, me neither! The vegetable box this week brought a brown bag of pak. I think they like to challenge me! Stir fry seems to be the most common use, although the leaves can be used instead of lettuce. The leaves looked beautiful, lovely fresh green parts and creeamy. So, soup it was. I had 2 medium and 3 small onions in the fridge and 1 large potato. I sliced the potato until it looked llike. Chips, then chopped the chips to even squares. I then chopped the onions.

Friday, 3 April 2009. Cucumber and Mint Raita. Yesterday I had a delicious curry and, with a little help from TBSITW. Came up with this recipe:. 250 ml/8 fl oz natural yogurt. Large handful mint leaves, chopped. Clove of garlic, finely chopped. Grate some of the cucumber skin, remove the rest and discard. Cut the flesh from the seeds and discard the seeds. (This removes a lot of the water.) Chop the flesh and dry a bit between. This is so easy I wonder why I always bought raita. A Slice of Chery Pie.

Sunday, 5 April 2009. Today I made mushroom soup from a recipe of Lindsey Bareham. In "A Celebration of Soup". It is the best book on soups ever. The only other good mushroom. Soup I made was when I was offered, I don't. Know how many mushrooms , but it was most of a g. Sized basket. I just made this soup by melting some butter and chopping up all those mushrooms, sauteing. Them with some onions then adding chicken stock and bringing it to the boil before simmering them for about an hour.
