Greens Simmered in Chicken Broth With Bacon and Scapes. I fell in love with this variation of 'collard greens' while vacationing in Charleston and dining at the famous Magnolia restaurant. Of course, you need not worry about finding 'collard greens' as any large leafy 'green' or kale variety will work nicely here. 10 -12 garlic tops (scapes) minced.

Always read through every recipe before you start (including the list of ingredients), even if you've made the dish a hundred times before. Make sure you don't mistake teaspoons for tablespoons when skimming a recipe. ALWAYS set the oven timer. A watched pot never boils!

I love this vintage scale I picked up at an antique store - it still works! Foley Food Mill - use to puree without liquifying - also removes peels and seeds - great for apple and cranberry sauces. Pastry Blender - use to cut butter or shortening into dry goods to get that 'cornmeal' texture.

The better the ham, the tastier the cooked greens. 3 bunches of greens (its easiest to find curly kale). 2 garlic cloves, crushed or finely chopped. 1 inch thick slice of good quality smoked ham, cut in cubes.
