BAKINGwithoutBUTTER: February 2012
http://bakingwithoutbutter.blogspot.com/2012_02_01_archive.html
Sunday, February 26, 2012. I love fresh flowers and I make a point of always having them in my apartment (yes, I buy them for myself, thank you very much). I had the opportunity to make a few arrangements for an elegant dinner party for my boss last night, which was a fun assignment for me to take on. I got quite a few curious stare downs by people who were walking down Divis, that's for sure. Here are a few pics I was able to snap via iPhone. Greens, yellows and whites. Packed up and ready to go. Heat a...

BAKINGwithoutBUTTER: Roasted Beets with Caramelized Shallots, Bacon, Radishes and Arugula
http://bakingwithoutbutter.blogspot.com/2012/06/roasted-beets-with-caramelized-shallots.html
Tuesday, June 5, 2012. Roasted Beets with Caramelized Shallots, Bacon, Radishes and Arugula. Here's my latest savory creation which highlights some of the best produce that's currently in season including arugula, beets, and radishes. plus bacon! The bacon adds a fabulous element of salty smoky flavor to the sweet earthiness of the beets. For this recipe I used golden beets and red beets. The dressing is simple as can be (EVOO, S&P) in order to let the natural flavors of the various ingredients shine.

Friday, March 23, 2012. Quick fire pea greens with toasted cashews, mushrooms, and ponzu. I'm a believer in the power of greens: so delicious, so good for you and so much variety it's impossible to get tired of eating them. While most people become bored with wintertime produce,. I actually love this time of year at the farmers market because the stalls are full of leafy greens, chards, citrus and root vegetables. A handful of sea-salted cashews. 2 Tablespoons olive oil. I large bunch of pea greens.
