Beat the eggs in a small bowl; mix with salt and pepper – add 4 tsp water to help yolk and egg blend. Melt 2 Tb of butter for later and set it aside to cool. Butter the pan with 2 Tb of butter, pour in the eggs, and let warm over medium-low heat. Stir constantly. Wait until it starts to thicken– this will take several minutes before anything happens – and then stir more, constantly, quickly until they are a bit dryer than you want. Seriously - by hand.
