Meet Shane Smith YesChef. YesChef Awards “History”. What we’re about. Pan fried gurnard with dry cured, smoked bacon, braised gem, sea vegetables and velouté. Chef Connor Woods, The Bay Tree, Carlingford, Co Louth. 4 x 175g gurnard fillets, pin boned. 1 tbsp olive oil. Squeeze of lemon juice. 200g dry cured bacon, cut into lardons. 2 gem lettuces, halved. For the fish veloute. 1ltr fish stock (bought is fine). 300ml Gourmet Classic Chardonnay. Place the stock and wine in a saucepan over medium heat.

The Awards will be presented during a Gala ‘black-tie’ event in May 2017 (date tba). The Awards night will begin with an opportunity for attendees to network.
