Chard and Ricotta Cannelloni with Tomato Roasted Pepper Mushroom sauce. Sautee chopped onions, garlic, chopped chard, S and P in olive oil until tender. Puree with a heap of ricotta- season with a scraping of nutmeg and more S and P if you like. Start sauce by sauteeing chopped onions and garlic til soft. Putting Your Garden to Sleep for Winter. Nolan and Chris gave us some great tips for keeping our garden comfy over winter…. In full-partial sun before the New Year: Take your biggest local cloves and put them in the ground spacing them 3-4 inches apart, with 18″ between rows, or try 2″ squares. Lay thick compost or straw over it and you should be able to harvest in June or July. Early, to grow in spring and then chop and compost. Controls erosion and weeds. Rye Grass if you have a rototiller or chickens.

Recipes: Condiments, Sauces and Dressings. We generally dislike rules, but the general rule of salad dressings: 1 part acid to 3 parts oil. Mix together a spoonful of good mustard, champagne vinegar, finely chopped or grated ginger, S and P. Whisk in olive oil. Can’t stress enough the joy of a blender/cuisinart/food pureeing device! Puree some dijon mustard, a medium shallot, lemon juice, tahini, a little white vinegar, olive oil, salt, pepper and a little sugar. A perky dressing for many occasions.

Make Aunt Lexa’s Dough with some chopped fresh rosemary blended in. Evenly slice fresh nectarines and toss with a squeeze of lemon juice and a few tablespoons of sugar. Lay out crust on a baking sheet, and neatly nestle nectarine slices in center. Fold edges of crust over towards the center, leaving the nectarines exposed. Brush a thin layer of apricot jam on nectarines and crust, and sprinkle with sugar. Bake at 350 until golden. Make Aunt Lexa’s Dough and place in pie dish. Garden: Amara and Jeremy.
