Re-creation이라는 CIA 내에 작은 요리동아리 활동 중 하나로 6번째 프로젝트를 진행하게 되었다. 이번에 내가 만든 요리는 ‘Kataifi Crispy Shrimp with Chipotle Mayonnaise’인데, 결과물이 나오기까지 상당히 많은 장애물이 있었고, 재료 수급에 어려움이 있어서 레시피와 다른 결과물이 나와버렸다. 전체적인 플레이팅은 내가 생각한대로 되었지만, 요리 퀄리티에 있어선 부족한 점이 많았다. 앞으로 주의할만한 실수를 나열 해보겠다. 큰 Strainer가 없어서 Chipotle mayo를 깔끔하게 스트레인하지 못했다. 새우 꼬리에 전분이 뭍어서 하얗게 됐다. 서울 고메 ...
