12289;そして卵のチリソースです。先日久々につくってみたら、やっぱりめちゃくちゃおいしい。以前のレシピ. はお弁当用にアレンジして、その本来のおいしさの半分も発揮できていないので、あらためてご紹介です。長ねぎ（白いところ）　１／２本. チリソースをつくる、その１。油（分量外）を温めた鍋に豆板醤を入れて炒める。立ち上る煙（空気？）で目がちりちりし始めたら、酢、砂糖、ケチャップ、スープを入れ味を調える。チリソースをつくる、その２。水溶き片栗粉でとろみを付け、みじん切りにした長ネギを加えてひと煮立ち。ごま油やラー油で香りを付ける。別の容器に取っておく。卵を炒める。鍋に油を温め、溶きほぐし軽く塩胡椒した卵をいれて、とろとろふんわりな半熟に炒める。火を止めて、そこに２のチリソースを加え、マーブル状にざっくりと混ぜる。一つ目は、卵はたっぷり過ぎる油で炒めること。卵１個に大さじ１．５－２杯は使います。ふんわりとした舌触りに加え、油の味も加わったよりとろーりとした味にもつながります。と、レシピを書いたものの、煮込み時には肝心なポイントがあります。 65288; Alain DUCASSE. 12301...
