Courgette, Chilli and Smoked Paprika Chutney. Have you grown loads of courgettes in your garden? Looking for something yum to make with them? TRY THIS ONE, BABY. Sweet, complex, warming and smokey - try with a nice sausage. I made this one to use up a glut of homegrown courgettes plus whatever I could find in the fridge, and just wrote down the quantities as I went along. They were as follows for 8 jars:. 16 kg peeled and chopped courgettes (see pic below). 1 apple de-seeded de-cored and chopped.

This is a very good Crème brûlée recipe. Rich without being heavy and stodgy. This next bit is the tricky part. You have to keep checking on them every few minutes. They can take ages to cook, or they may already be nearly there. Different every time! Once they are done, carefully remove the tray of boiling water from the oven. Keep it level or the water will soak through your oven cloth. Ow! Put the brulees in the fridge to cool. Once they are fully cold you can serve them.

Golden syrup, sunflower and oat granola. I just discovered how YUM granola is. Ok, I'm late to the party. Blimmin' expensive though, like 3 quid for a little box in the shops 'innit? Well I thought I'd have a go at making it, how hard can it be? Turns out it's really bloody easy and even nicer than the bought stuff. Shocker! 300g Organic Jumbo Oats. 3 tbsp golden syrup. 60g soft light brown sugar. Serve with some yummy local organic natural yoghurt or something.

This is something I find myself using all the time, to drizzle over toasted focaccia, to fry things in, as an ingredient in dressings or bread, and so on. It's bad when everything you cook tastes of garlic but, well, it's so bloody yummy isn't it? Garlic around 4 bulbs to a litre of oil (try and get some nice local organic stuff, it's around right now). Oil - I'm using half grapeseed and half extra virgin olive oil. Both organic and healthy oils and mixing them tones down the flavour of the olive.

Spiced slow cooked lamb with a spelt, broad bean and chard braise. Something I made for supper a while ago, and which used up a lot of produce from the garden. Very delicious too. Quantities are imprecise because I can't remember exactly, so just make it up as you go along. :). For the slow cooked lamb:. Diced lamb from your butcher. Ras el hanout spice mix (got mine from the health food shop). Home made tomato puree.

Spicy Prawn Caesar Salad. A simple summery dish, but really good. Makes a great starter- just give 4 prawns per person. It’s a little unorthodox using the little gem lettuce, but it works. Get everything ready in advance, then dress the salad and cook the prawns at the last-minute before serving. Raw shelled prawns (if you use king or tigers, get the organic ones). Caesar Dressing (blitz some garlic, anchovy and parmesan into some mayo). Chopped coriander, shallot, red chilli. Olive oil, salt and pepper.
