We went to our favorite spot to splurge on some of the best wines and came down to this lovely Cabernet Sauvignon- Clos Do Val (Napa Valley 2007) which is rich in blackberries and black currants, full of flavor and leaves you with a taste lusting for more! We also picked up some. This was a perfect night to finish the day with. So tonight we made rice bowls and breaded eggplant leftover from the eggplant EGGsplosion I made the other night.

One of my favorite things to make. It's quick and simple! I usually enjoy having this delicious sandwich for a light meal. Main ingredient: Avocado, with some grilled sweet bell peppers and onions, tomatoes, alfafa sprouts, lettuce, a little bit of salt and pepper, all cuddled in a nice garlic/onion roll. Let's get chunky wit it! Oatmeal Cranberry White Chocolate Chunk Cookies. 2/3 cup brown sugar. 2 large organic brown eggs. 1 1/2 cups rolled oats (we used old fashion oats). 1 1/2 cups organic flour. 1 teaspoon vanilla extract. 1 teaspoon baking soda. 1 1/4 cups dried cranberries. 2/3 cup white chocolate chips. 1 Preheat oven to 375 degrees F. Get it all in therrrreee. You gotta get low and shake it to the ground! Slap those bad boys on a cookie sheet. Compliment it was some yummy Almond milk!

So tonight we made rice bowls and breaded eggplant leftover from the eggplant EGGsplosion I made the other night. Breading: Italian style breadcrumbs, garlic and herb powder, a pinch of cayenne, romano parmesan cheese, a teaspoon or so of cornstarch and perhaps a tablespoon of whole wheat flour.
