Scaling up recipes for mass production? September 12th, 2010. 01:26 pm - Scaling up recipes for mass production? I know most of the jam/jelly recipes I've seen say not to scale up because it affects the time required to cook it - the layer of fruit and juice is deeper, so it takes more time to evaporate, leading to pectin destruction and texture issues. What if you were to put the double batch in a much wider pan, to reduce the depth? Do you think that would work? September 13th, 2010 02:57 am (UTC).
