It's just one of THOSE days. Wednesday, January 4, 2012. Where does the time go? December was a roller coaster ride. But now we are in January and I almost feel bored. Just kidding. Not with 2 2 1/2 year olds and an almost 5 year old. And she had to be on antibiotics for a few days after surgery, too. So we all had antibiotics during the month of December. I made this dish while Toni was working out of town. Both of us wanted fish in some way that was easy and quick to make. You can add more types of fish or shell fish to this recipe depending on your taste or preference. This is a basic recipe that you can modify as you like.
