Nem a Vó fazia…. VÍDEOS – TORRADA TORRADA. Já contei aqui que estou com um novo blog e um projeto de vídeos de culinária, que chama Torrada Torrada. É um novo blog de receitas, dicas de decoração, músicas e a melhor parte é que: minhas receitas agora estão todas em vídeo! Toda semana eu posto dois vídeos novos, doces, salgados, drinks, dicas básicas. Tá uma delícia de acompanhar, vocês vão amar :). Estou muito feliz com o resultado e principalmente, por conseguir dedicar meu tempo ao que realmente gosto!

We are getting busier and busier at the bakery and I am STILL unpacking/organizing from the cross country move. It's been challenging to try to make it all work and yet have a little time to unwind and explore. Whew! I am going to try to combine the last few weeks at the bakery instead of making separate entries for all of the hustle bustle that has been happening.

Reinvention via pastry school. Monday, November 1, 2010. New job- Tony's Off Third! Before even landing in Florida, I had several interviews lined up so that I could hit the ground running. The job I really wanted though was Tony's Off Third. Assorted petit fours with lemon meringue, opera, tiramisu cups, fruit tarts, chocolate ganache tarts. Lots of wine tastings going on here! Chef Emily's gorgeous cakes in the windows. Some of the display cases getting stocked up- something to tempt every pallate!

Reinvention via pastry school. Saturday, October 16, 2010. New state, new job, new life! It's been a while since my last entry. I have a good excuse this time though.we moved! This time the move was not just across town but rather a 1300 mile trek from Austin, TX to Naples, FL! We have been wanting to move to Florida for quite a while and the realization finally came together with the help and support of family and friends! Here they are unwinding on the hotel bed after day one of the journey.

For now, I think we are on stable ground but anything is possible here in the land of the rich and aging.HA! A pinch of salt. My favorite kitchen tools. I do love green tea and I'm always ready to try dessert recipes containing matcha powder (matcha green tea is use in Japanese Tea ceremony). This tea works beautifully with white chocolate and almond but this recipe makes steamed cake called Mushipan in Japan. As I used whole sugar (I feel less guilty eating sweets made with whole sugar! My cakes have kind of a look from the seventies! Néanmoins ils sont délicieux! 3 tsp matcha tea powder. 2 tsp baking powder.

A pinch of salt. My favorite kitchen tools. What to do with egg white when you make cannelés or crème brûlée? Here is a great idea that everyone will enjoy! It's soft and delicious especially when you take time to brown the butter as it should be! It's easy to make and to take for a pic nic if you can resist eating them all at once! For this recipe, I chose a mix of almond and chestnut but you can make it 100% almond or replace the chestnut by pistachio. 140g of salted butter. Leave to cool a little.
