My first order of business was to figure out the chemistry of these things, particularly alpha acids. Because I had a good quantity of the hops, I didn’t mind sending them off for analysis. My go-to place has been BrewLaboratory. I was pleasantly surprised by the alpha acid values–5.8%! Beta acids clocked in at 3.2% and cohumulone at 30%.

For about two weeks; it seems like a great time to evaluate the beer and reconfigure it for its next iteration (and there will. Starting gravity = 1.057; final gravity = 1.012; abv = 5.9%; IBU = 50 (estimated). Hazy, light golden hue; head is tall and persistent, with a creamy appearance and off-white color. Faintly floral hop aroma, with a very light caramel malt aroma. Brilliantly clear and light yellow in color, with a low white head that is pretty persistant. A pretty dry and light-bodied beer.
