Laura's Kitchen: March 2015

http://www.baking-with-laura.blogspot.com/2015_03_01_archive.html

Monday, March 30, 2015. Harvest Corn Chowder with Bacon and Cheddar. Spring may not be the ideal time to be posting this recipe, but after coming home late from work today to a warm, bubbling slow cooker of corn chowder, I realized that now is a great time for this recipe. I hope you enjoy it! After sauteeing the onions and celery, I let the mixture cool and then divided it into six portions: 5 freezer bags and one for the pot, so I could enjoy soup that day. Each batch need a bay leaf. The recipe also c...

Wednesday, May 13, 2015. I came across this recipe many years ago and have adapted it several times. The original recipe called for regular flour, which I have substituted for a gluten-free flour blend. Also, I have cut down on the oil substantially. Previously, the recipe used 1 1/4 cup of oil, but I now use 1/2 cup oil and 3/4 cup applesauce. Even with these changes, the cake is delicious. It is definitely the. 1/2 cup oil and 3/4 cup applesauce. 3 cups grated carrots. 1 tsp pure vanilla. Add dry ingre...

Laura's Kitchen: Crunchy and Creamy Broccoli Coleslaw with Turkey Bacon

http://www.baking-with-laura.blogspot.com/2012/05/crunchy-and-creamy-broccoli-coleslaw.html

Wednesday, May 2, 2012. Crunchy and Creamy Broccoli Coleslaw with Turkey Bacon. This fresh twist on broccoli salad comes from. By Janet and Greta Podleski, the sister duo who are famous for transforming regular recipes into great tasting low-fat versions of the same recipe. This one was delicious and kept well in the fridge for a couple of days. As you can see, I served it alongside homemade french fries and sesame and coconut crusted turkey strips. 1/2 cup light mayonnaise (not fat-free). I love to cook!

Laura's Kitchen: Thai Crab and Mango Salad

Monday, July 8, 2013. Thai Crab and Mango Salad. This fresh salad comes from a new magazine, Fresh Juice: Healthy Made Delicious. Flipping through the pages, my eyes were drawn to this recipe and I think this is my new favorite salad. It was easy to make and delicious! I made a few changes and you can do the same according to what your taste preferences are. I just can't wait to have my girlfriends over for this salad! 2 Tb vegetable oil. 1/4 cup thinly sliced shallots (I used regular onions). 2 Whisk to...

The Doan Family: November 2014

http://the-doan-family.blogspot.com/2014_11_01_archive.html

Sunday, November 23, 2014. This weekend Sarah and I took advantage of our warmer weather and headed outside to put the garden to rest for the season and decorate for Christmas. It was great to be able to decorate without the cold and snow. I know in the past I have been outside in much colder temperatures, so this was lovely! We like to get started early as there is much to do inside and out at Christmas (and we love this! Let me take this opportunity to invite you to our Annual Christmas Open House.

The Doan Family: August 2015

Tuesday, August 04, 2015. For many years now, our family has been going to the Salmon Arm Camping Resort for an annual family camping trip. In recent years, we have added to our number and we now have Auntie Dawn and Uncle Greg, Stewart and Tobi and their family, and Erin and Owen and their family. It makes for a wonderful time together. Here Magda is picking Anna up in her inner tube, much to Anna's delight. Lounging by the pool is definitely a treat! Sophie, Sarah, and Ethan enjoyed themselves too!

Monday, July 28, 2014. One of the "must do" things on my list for summer was visiting Lac le Jeune. I love how close the lake is and the call of the loons beckons me to come. Sarah looking very relaxed. Sophie - bundled in a towel after braving the water. Children Buckets Sand Water = Fun. Due to the higher elevation, the area is much cooler than Kamloops, making it a great place to visit on our hot days. Eagle Bay Camp - Part One. Love the fun they are having! I love Ethan's smile! Up, up and away!

The speaker drew upon the work of Barbara Friedrickson, who believes that love is a foundational emotion. Now at home, I have taken the opportunity to read some of Friedrickson's work, which I include here, interspersed with some images from our family's celebration of Valentine's Day. Saturday, October 18, 2014. Forced Family Fun - Lac le Jeune. For today's forced family fun activity, we drove to Lac le Jeune for a good old fashioned hot dog roast. Well, not exactly.we used the coleman stove. We did not anticipate the wind, and it was rather cold when we arrived. Fortunately, we did have gloves and hats, but it was still cold (but then isn't that what you would expect when it is forced family fun? Sarah was a real trooper. Regardless, it was great to be out in the great outdoors!

Tuesday, December 30, 2014. Sophie Comes For a Visit. We love to spend time with our nieces and nephews. Yesterday, we were so pleased to have Sophie come and stay with us overnight. Given that we are all on holidays, it meant we could plan some extra special things to do together. When I saw the gingerbread pan (in the first photo), I just knew it would be perfect for making a giant cookie with our nieces and nephews (and it was! As you can see, the girls had lots of fun getting the dough ready. I had s...

Wednesday, August 06, 2014. For many years now, our family has been gathering at the Salmon Arm Camping Resort for a long weekend full of fun, fellowship, and relaxation. This year was even better as we welcomed more family: My Auntie Dawn and Uncle Greg, and my cousin Erin, her husband Owen, and their five children. Anna and Elizabeth had lots of fun in the pool. Sunday, May 31, 2015. An Afternoon at the Lake. Jim was meeting with a client this afternoon, so Sarah and I took off to spend a few hours at the lake. It has been such a long time since we went to Paul Lake and it was definitely worth the trip. The two of us enjoyed reading and visiting while listening to the waves and sounds of children trying to catch the fish. Some people kayak in the water, others read in the water :). We love our avid reader! And yes, the book was safely at shore! The table is ready.

The Doan Family: January 2015

http://the-doan-family.blogspot.com/2015_01_01_archive.html

Wednesday, January 07, 2015. This evening, Sarah and I worked on building a snowman. The temperature has dropped and I thought the snow would be perfect, but it wasn't quite right for rolling the snow. We were able to pack the snow and we used large chunks of snow. The chunk used for the head was rather triangular, which resulted in our snowman looking more like a snow elf. Sarah is trying to emphasize the beard. Yes, our Snow Elf has a beard! Sarah and the Snow Elf on the island in front of our house.
