Here’s an easy midweek meal that you can rustle up in no time… Chicken pasta in crème fraîche. 250g pasta – whatever shape you like. 250g chicken breast – leave this out for a veggie option. 2 handfuls of mushrooms – diced (more if you are not using chicken). 2 red peppers – diced. 2 large carrots – diced (and/or whatever vegetables you have in your fridge). 2 gloves garlic – crushed. 300ml half-fat crème fraîche. Pistachio Frozen Yogurt – The Wild Card. Here is the last of my trio of frozen yogurt flavours – Pistachio. Yes! If it’s good enough for ice cream, then it’s good enough for my frozen yogurt. Don’t knock it till you’ve tried it…. 500g thick plain yogurt. 2 tsp muscovado sugar. 50g plain pistachio nuts without shells – ground. You can use a blender if you’ve got one or a pestle and mortar like I did, if you don’t. Failing that, out them into a freezer bag and bash with a heavy item :-). And The Fruity One.

Many, many times. You get home and all you want to do is rip a pizza out of the box and shove it into the oven with the timer set to 10 minutes…. But there is another way.
