Starspinning in the kitchen. A single girl's freezer revolution. Monday, April 8, 2013. I don't want to have to cook every day. I don't want to have to spend time preparing food, and thinking about food and cooking food every single day. There has got to be a way to eat well without all the overhead. This is what I was thinking in the weeks before I started my experiments. What could we do after work if we already knew what was for dinner? Pull out the weekend project? Wouldn't that be wonderful?

You need to be in attendance but for most of the cooking time you don't need to do very much. Ingredients (makes 1 cup). 3 cups diced Spanish onions. 1 cup olive oil. 6 plum tomatoes (1 lb). 1/2 tsp minced garlic. It keeps in the fridge for 1 week and the freezer for about 4 weeks. When I get home after a long day and I'm a bit peckish, I make the basic version. When I get home and I want a quick hot meal, I add quinoa. When I'm starving, I add chicken. 1 cup chicken broth*. 1 green onion chopped*. Salt and pepper to taste. 1/3 cup cooked quinoa.
