I'll say that the colors involved in this dish exemplify 'fall' to a tee. We chose mostly root vegetables, rosemary and fresh sage to really bring out the autumn season in these veggies. Colorful Roasted Autumn Vegetables. 1 small or medium sized butternut squash. 15 (or so) brussel sprouts. 2 medium sized red onions. 1 large red bell pepper.
