Add one teaspoon of full fat crème fraiche (low-fat won’t have the right consistency when heated), a plentiful handful of finely chopped chives and a generous helping of salt and pepper. Melt a knob of butter in a large non-stick frying pan with high sides. If the pan has any scratches on it, it probably won’t work, so make sure yours is in good condition. Pour in the egg mix.
