Bottomless Pie

December 28, 2013. These days I love pairing fruit and savory toppings on pies. It's just soooo satisfying! Cranberry sauce (made from scratch). 1 1/4" slice of pancetta. 1/2 tsp. fresh thyme. 1 Tbsp. reserved pancetta fat (oil leftover in pan). Hope you are all having a wonderful holiday season! November 2, 2013. There are days when all I want is breakfast for dinner. There are in fact many days. A poached egg over quinoa, a side of scrambled with pita, kale, and hummus. Need I go on? Think over easy egg.

Bottomless Pie: March 2013

http://www.bottomlesspie.blogspot.com/2013_03_01_archive.html

March 21, 2013. Just like last week's tomato pie, today's pie is another that was a long time in the making. As a beer brewer, home brewer, and all around beer enthusiast, I felt pretty silly when Ashley asked me "why I hadn't tried to incorporate beer into any of the pizza pie recipes I've come up with". After I got past my initial huh-men-a-huh-men-a-huh-men-a's, I quickly concocted a funky, malty, beer based pie to regain my beer cred. With a funky cheese base laid down, the malty, tangy mushrooms on ...

Bottomless Pie: December 2012

http://www.bottomlesspie.blogspot.com/2012_12_01_archive.html

December 12, 2012. This past week has been dedicated to decking the halls, making Christmas cards and drinking hot chocolate. So to stay in the spirit, we created a rich winter white pie. I believe that some of the most creative food is made when people use the resources they have on hand and just go for it. I picked up our fresh box of produce from our CSA and just could not be bothered to go out and grab other ingredients for pie that we usually resort to, like mozzarella. 1/3 cup creme fraiche. Achiev...

Bottomless Pie: November 2013

November 2, 2013. There are days when all I want is breakfast for dinner. There are in fact many days. A poached egg over quinoa, a side of scrambled with pita, kale, and hummus. Need I go on? When the weather starts to turn, I crave comfort foods, particularly carbs, and cheese… A perfect storm for making a pizza pie! A little bit of buffala. 3 tbsp. cream cheese (I used cowgirl creamery). 5 slices of hot coppa (thin). 1) Halve the tomatoes and mince the garlic. Mix. Turns a translucent white color.

Bottomless Pie

http://www.bottomlesspie.blogspot.com/2013/04/over-past-few-months-i-have-fallen.html

April 23, 2013. Over the past few months, I have fallen under the spell of Za'atar. Zataar is middle eastern spice blend, mainly composed of thyme, sesame seeds, sumac, and salt. I kept running into items on menus that listed Za'atar as an ingredient (on flatbreads, in spreads, even a Za'atar bagel), and the stuff tasted so good that I figured I'd pick some up to have around the house. Turns out the stuff is cheap too. So cheap that they sell it in 1 lb. bags. That's. A lot of Za'atar! 1 tbsp Olive oil.
