Sunday, April 14, 2013. Orzo with Salmon and Feta. I've mentioned my husband's love for fish before. If I'm going to cook fish, odds are it's going to be salmon. Tilapia isn't very flavorful and halibut is just so expensive. Salmon is a nice compromise and as such, is usually the fish I cook with. I've tweaked it to our preferences so feel free to change things up if you want to. It only makes it better when it is exactly how you want it. 8 oz orzo pasta. 1 pint cherry or grape tomatoes. 1 tbsp soy sauce.

Monday, November 26, 2012. As mentioned in my previous post, I also made brownies for my sister's wedding. The brownies I made for that were this. Recipe from Smitten Kitchen. These brownies are wonderful and have been made multiple times at my house. A wonderful variation on those brownies is giving them a Mayan spin. To have something considered "Mayan" chocolate it includes an addition of spices like cayan pepper and chili powder. 3 oz unsweetened chocolate, chopped. 1 1/3 cup sugar. 1 tsp red pepper.

I made this after 12 hours at work and an hour and a half at the gym. I definitely didn't want to spend more time than I had to in the kitchen. I was tired and wanted food. It looks pretty too, no? This is the perfect chicken pot pie recipe and definitely hit the spot. 3 cups chicken broth. 1 lb chicken thighs and/or breasts. 1 tbsp vegetable oil. 1 onion, diced. 3 large carrots, thinly sliced. 2 ribs celery, diced. 1 tbsp dried parsley. 1 tsp dried thyme.
