Efter en tids bloggpaus är det nu dags för provsmakning av en öl som bryggdes för drygt 1½ år sedan. Ölen går under namnet Drie Obscura. Och är primärjäst med en brettanomyces-stam från det belgiska bryggeriet Drie Fonteinen. Därefter har den sekundärjäst i ca. 14 månader med bottensatser från Drie Fonteinens geuze och avslutningsvis torrhumlats med galaxy, amarillo och cascade. Alkoholstyrkan landade på 7,4%. Extra Light DME for the base malt - simplicity and color. Steep some mid-crystals - color and a dash of unfermentables. Wheat Malt - head retention. Sugar - boost ABV and dry her out slightly. This is a hop-centric beer, let’s let them pop! Extra Light LME - 9.9 lbs. White Wheat Malt - 1 lbs. Crystal 40(ish) - .5 lbs. OG - 1.077.

In the beginning of October I put 40 gallons of 18 month old "Méthode Lambic" beer on to 80 lbs of wild blackcap raspberries.
