Brio Bakery started in my kitchen with a oven and two cast iron pots. After a few years of trial and error baking, I decided to attended the San Francisco Baking Institute. Once there I was fortunate enough to learn from some of the world's greatest bakers. I originally went to the school to learn about bread, however like so many things it went in several different directions. My eyes were opened to so many new and exciting things. Prairie Loaf - Sourdough 90/10. Our sourdough is naturally leavened and made with organic unbleached flour, water and salt. With a chewy crust and an open crumb (large irregular holes in the interior), this is the true standard of artisan bread. Sourdough can last a couple weeks because of its simple process. Our Prairie Loaf is 90% organic white flour and 10% organic stoneground flour. Our Prairie Loaf loaded with ripe, rich Kalamata olives, herbes de Provence and lemon zest. Raisin Walnut Prairie Loaf.
