To get on with it- I introduce to you one of these delish veggie dishes- Sopranos style! Spinach and Four Cheese Manicotti. 1T evoo (to saute onion and garlic). 1/4 c onion finely chopped. 2 tsp garlic (i used 1 t minced). 15 c ricotta cheese. 15 c shredded mozzarella. 4 oz cream cheese- softened. 1/3 c grated parmesan. 1 tsp italian seasoning.
